Chef Antoine came to Indonesia from France almost 20 years ago with a long list of Michelin star experience under his belt. He worked his way up from trainee to Sous Chef in various 1 and 2 star Michelin restaurants in UK and France before appointed as the Executive Chef in a number of Le Meridien hotels around the world.

In 2001 he is one of the first to bring authentic French cooking to Indonesia by setting up his own restaurant called Java Bleu. He then ventured into frozen gourmet food production in Bali before coming back to Jakarta in 2013
